Thursday 4th:

roasted vegetables with Initiative Forum salade

Ingredients for roasted vegetables (for two):

  • 2 small sweet potatoes
  • 2 carrots 
  • 1 pepper/paprika
  • 2 medium red onions
  • 1 medium aubergine
  • Thyme
  • Olive oil
  • Rosemary
  • Pepper

Ingredients for Initiative Forum Salade (2 serves)

  • ½ cucumber 
  • 2 medium tomatos
  • ½ red onion
  • ½ feta cheese
  • some leaves of lettuce
  • olive oil
  • ½ lemon
  • basil
  • oregano

Friday 5th:

Vegetarian Curry with rice

  • 2 carrots
  • 1 pepper/paprika
  • 1 onion
  • garlic (up to you)
  • 1 small zucchini
  • 1 can of chickpeas 
  • ¾ of coconut milk can
  • ginger
  • curcuma/turmeric
  • curry powder

Carrot salade:

  • 3-4 carrots
  • 1 apple
  • lemon
  • raisins 
  • olive oil

Saturday 6th:

Leek, potato soup with tomato mozzarella and pesto toasts

  • ½ - 1 leek
  • 3 medium potato
  • ½ -1 pot of sour cream 
  • vegetable bouillon 

Toasts:

  • bread that you like/baguette
  • 2 tomatoes
  • 1 big mozzarella
  • pesto
